Hoppin' John & Field Greens
Gullah-Geechee, Lowcountry · Davon Camel
Carolina Gold rice and field peas cooked low and slow in one pot, finished with greens picked that morning from a grower two counties over.

Hoppin' John traveled with Gullah-Geechee families along the Carolina coast, cooked for new years, homecomings and ordinary Thursdays alike. The rice is the point: it carries the history of who grew it.

Rice cooked down in tomato and pepper until the bottom catches, served with bread pulled from the oven the same morning.
